Life Changing Loaf with Shrooms

The life changing loaf by my new roots has got to be one of my most used and most favourite recipes. She has lots of great recipes so have a look at her blog!  This loaf is a weekly staple at my house and has been on rotation for the last 10 years or so. The basic recipe is below. A loaf lasts about a week if kept in an airtight container. I only ever use it toasted.

INGREDIENTS

1 cup sunflower seeds

½ cup flax seeds

½ cup  almonds

1 ½ cups  rolled oats

2 Tbsp chia seeds

4 Tbsp. psyllium 

1 tsp herb salt 

1 - 2 tsp each of your fave mushroom extracts - I like chaga and turkey tail for their gut loving attributes

1 Tbsp. maple syrup or brown sugar 

3 Tbsp. melted coconut oil 

1 ½ cups  water

INSTRUCTIONS

In a flexible, silicon loaf pan combine all dry ingredients, stirring well. I then use our hand held blender to whisk the oil, sugar and warm water together. Pour the wet over the dry in the loaf pan and mix thoroughly. Squish down and leave for at least 4 hours or overnight. 

Preheat  oven to 175°C.

Place pan in the oven on the middle rack, and bake for 20 minutes.  Remove bread from loaf pan, place it upside down directly on the rack and bake for another 30-40 minutes. Make sure you have a tray below it or your  oven will fill up with black pungent smoke next time you use it  and set off every alarm in the house, make breathing difficult  and ensuring your house smells like someone had a bonfire in the lounge  for the next week( just theoretically)  Bread is done when it sounds hollow when tapped. 

This bread is so good, is great for your gut and digestion not to mention just being extremely nutritious. Just looking at it makes me feel healthier.
